Loaded Mashed Potatoes

Try not to taste test too often or you'll find, like me, that you accidentally ate 1/2 the batch.

Ingredients

3 lb potatoes
1lb bacon
1 bunch green onion
5 cloves garlic
1 cup sharp chedar cheese
8 oz sour cream
1 TBS parsley
1/3 cup milk
6 TBS Butter, melted
2 tsp salt
2 tsp pepper

Directions

Cut Potatoes into small bits and boil until soft.
Chop up bacon into bits and cook in a skillet.
Remove cooked bacon and set some aside for garnish.
Saute green onion (save some of the end for garnish as well) and garlic in bacon grease, then drain.
Mash potatoes and mix everything together.
Optional: Use this method for twice baked potatoes.
