Try not to taste test too often or you'll find, like me, that you accidentally ate 1/2 the batch.
Cut Potatoes into small bits and boil until soft. Chop up bacon into bits and cook in a skillet. Remove cooked bacon and set some aside for garnish. Saute green onion (save some of the end for garnish as well) and garlic in bacon grease, then drain. Mash potatoes and mix everything together. Optional: Use this method for twice baked potatoes.
