Make those Tbs of Tabasco tsp if you are a wee baby.
Use 1.5Tbs on meat and the rest on vegetables. Sear meat and set aside. Saute onions and garlic in oil, then add pepper and celery. Let them cook for a few minutes, then add the remaining vegetables, the Tabasco and Worcestshire Sauce, and the roux. Incorporate and slowly begin to add stock until you have reached desires thickness. Add meat and simmer for an hour or so. Serve with rice and enjoy!
