Marinate your chicken in pickle juice for ~1 hour. I think it's best as butterflied chicken breast, but you can also dice it up for chicken nuggets. In the meantime, mix the flour and spices together and scale your combination with how much chicken surface area you plan to use, nuggets use more. Whisk up your eggs together in the bowl with a splash of milk. Now coat the chicken in the egg and then flour+spice. Heat up your oil to ~350F, and fry both sides for 2 mins each. Serve in some buns with a little bit of pickle slice and pepper-jack cheese, and you got yourself a good sandwich!
