Ceviche

This is a recipe from a good friend of mine. Kind of a loose recipe, as I experiment and change ingredients / quantities. Add Pineapple for a little extra sweetness.

Perfect for summer!

Ingredients

16oz cooked shrimp, chopped or tiny
(Optional) Something like Tuna or Octopus
3 large tomatoes, diced
2 large cucumbers, peeled and diced
1 cup cilantro leaves, chopped
1 red onion, diced
4 lemons, juiced
zest from 1 lemon
2 avocados, diced
1 TBS salt
2 tsp pepper
1 tsp oregano
3.5 oz can of chipotle peppers
mayonnaise, to taste
tostadas

Directions

Mix shrimp with tomatoes, cucumbers, onion and cilantro. Add lemon juice and season with salt, pepper and oregano. Add avocado and mix. Refrigerate until it's ready to serve.

Put chipotle peppers in a food processor or blender. Add mayo until you get a good heat level. Add salt to taste.

Spread chipotle-mayo on the tostadas and top with Ceviche.
